Yeast Starter Question???

Hi all,
Most of brews end up around 1.050-1.070 and I was thinking of starting my own yeast. I built a stirplate and have a 2000 ml and a 5000 ml flask but had a couple questions.
Does this sound okay?
5 gallon batch - 1 cup dme 8 cups water (1 wheats pack)
10 gallon batch 2 cups dme 16 cups water (2 wheats packs)
Will this work?
