I’m currently lagering a Dortmunder using Bavarian 2206. I broke my hydrometer on brew day so I do not have an OG. It has been in primary for two weeks and I plan to transfer it to a secondary at the end of week three for the long haul. When I go to bottle, it will probably be a month if not more from now. The yeast could settle and become inactive. My question is: How much of my washed yeast starter should I reintroduce to make sure they are able to carbonate? What should my concerns be?
