Yeast for mead

Made my first mead with my brother-in-law. When visiting my beer store the lady said I would need one package of Pure pitch yeast for 5 gallons.

Reading the package, it says an SG over 1.065 needs 3 packets. My current SG is 1.096. Can I get away with one package or do I need to go buy two more?

It says it has 100 billion yeast cells so I would think you're good, I should look up that yeast before lending other advice.

What is the name of it? I see its made by White labs so I'll try and look up that first.
