I brewed my first all grain on 9/24 OG 1.054 -- racked after 4 days, and ended up bottleing on the 7th of this month. I just cracked open the first one tonight - had a nice thick head but it smell and tastes like Ive been chewing on a green leaf from a tree. I can tast good beer when it hits my lips but the aftertaste is killing me. Am I just jumping the gun and should I let it age longer?
I know i messed up on the sparge but i hit all the numbers for SG right on. So any help is appreciated

Coriander seed will sometimes taste just like fruit loops. It mellos with cooking/time in food, though I've never brewed with it.

A whole ounce of any spice is A LOT! Hopefully it will mellow with age. Most folks that brew with coriander use it very sparingly, as it's pretty powerful stuff. 1/2 to 1 teaspoon of lightly crushed seeds will probably be pretty noticeable in your beer. More than that might be overpowering - especially if you used ground coriander rather than crushed coriander seeds.
 
It'll be fine. Young beer is usually called "green" for a reason. Give it another week and it should be fine.

That coriander won't make it taste green but it will be noticeable and it should really smooth out after about 3-4 weeks in the bottle. I once used too much coriander and not enough bitter orange in a brew.. it was actually very good but wasn't quite the same as blue moon. Let us know how it turns out.
