What is a good wine making book that contains the fundamentals of wine making? I have my very first batch of wine making right now and have already noticed the rookie mistakes that need to be fixed going forward hence why I went the Apple Cherry concentrate route.
 
Dan Pambianchi is really good. Both as a person (he is very helpful on a personal basis) and his books and papers but IMO, you really need to have some basic understanding under your belt before you can really make use of his books. Techniques in Home Winemaking is more for a sophomore or junior college course than a freshman class.
