What to build? HERMS, RIMS or something else?

Hello HBT!

I need some of your expertise to help me figure out the right build for me. There seems to be so many different builds out there I just find myself getting lost trying to figure out what build would be best for me with the equipment I already have on hand (currently planning for a wedding so I'm trying to keep expenses down).

The current All Grain system I use is just boiling water in a brew keg using a pump to transfer it over to a 5 gallon cooler then manually fly sparking till clear then transferring back to the brew keg for the final boil. I have been doing it like this for some time now but would like to upgrade to a more efficient and controlled system.

Here is a short list of the main gear I have:

  • 2x Sanke kegs (one has a spigot taped onto it and the other is just waiting to be used)
  • 1x 7 gallon brew pot
  • 1x 5 gallon brew pot
  • 1x 5 gallon igloo style cooler
  • 1x brew pump
  • 1x wort chiller
  • 1x Single tier brew stand (see picture)

So with this is there a system that would be best suited for the gear I have?
