What do you think about trying to ferment a batch using several bottles of Weissbier?

The big potential pitfall is that the yeast that the brewery used to consume the Speise may have been been a lager strain and not the strain used to carry out the main fermentation. This is, apparently, fairly common practice. If this is what they have done you won't have much wheat beer character in your product. It used to be known in the HB community which breweries did this and which didn't but I certainly don't remember.
 
I've heard you can do this but haven't tried it myself. If I did, I'd want the dregs of more than one bottle added into a starter due to suspicions the yeast would be a bit weak.
A slightly foamy starter from the bottle dregs would be an interesting experiment, especially if it worked.
