Fermented one of my favorite recipes, similar to Sapporo. Used Wyeast 1007 for a pseudo lager, something I've done a few times before.

What's new is this: strange goo on top. After 3 week ferment, I opened my bucket ready to bottle and was surprised.

I thought, infected? Anyway, I scooped this stuff to the side and took a gravity sample. 1.004.

Smelled good, tasted good so I kegged it.

A few weeks later, and yum! Super delicious, great head retention and clean as a whistle.

Lesson of the day: fermentation is nasty business, but you have to trust the yeast!

I've learned to never be surprised what yeast will do. It's alive and has a mind of its own.
Sometimes, when I use lots of late minute additions I get a funky, small amount of scum on the top that looks funny. It's all good.
