Is there any disadvantages of buying jugs of water from the store? I live in a tiny apartment and filling water jugs is a pain.

Lots of people start with RO water and add whatever minerals they need for the style they are going for.

Generally, if you are brewing extract, you don't need to add minerals, as the extract already has what you need. All-grain is a different animal and water chemistry is more important. If you don't want to get bogged down in the water chem details, there is a great primer on the subject that will help get you started.
