I have a bunch of Vienna and have been thinking about making an IPA with it. I know in Nugget Nectar they use 80% Vienna. I know it is technically an Imperial Amber, but at 90 IBU's it could be considered a Vienna IPA. Below is what have come up with. Let me know what you think. Thanks.

what are you trying to accomplish with the vienna?

I have a DIPA that used 10# pils, 5.5# vienna and 2# of oats in the grist.
 
A few years ago I made a Vienna Calypso IPA that I really enjoyed.

95% Vienna
2.5% C120
2.5% Caramunich II

Bittered with Magnum at 60min
Calypso FWH, 10, 5, 1, dry hop

The calypso gave the beer a sharp bite, almost astringent for the first 2 weeks or so in the keg, but then smoothed out nicely. I really enjoyed that beer. I also like playing around with base malts that aren't traditionally used at 80-100% of the grain bill. Wheat, Vienna, Munich, etc... I have no problem brewing a beer with any of them as the main base malt in the recipe.
 
I've been doing the same thing. I think using two row pale with vienna is going to be very bready. I would swap the pale for pils. Should provide a bit of a cut and bring you back to the crispness IPA's typically have.
 
I love vienna malt. Just trying to play a little bit. I do have some pils laying around. I'll swap them out.
 
Here's what I ended up brewing. Took a reading today. 1.012. Might top off with a little H2O when transferring to secondary.

Looks good to me. Not sure why you would want to add water after the fact. Not necessary in all grain.
 
ABV is at 8.65% right now. I'll taste it before transferring. I might want to get it a little closer to original ABV.
 
I don't think my software calculated the Honey addition correctly.

Honey plus a pretty low mash temp means you're about right. Not sure why you'd add cara-pils and honey. You're not going to get any flavor from the pilsner or color; you could just go for straight vienna and honey.

I've made a vienna/simcoe smash, and it was awesome; I can dig the Columbus and Amarillo but I bet your Centennial will disappear.

Either way, it looks like a tasty brew, and hell, if it turns out good, probably wouldn't change a thing! But you're a homebrewer and if it turns out good your're going to change a lot. :mug:
