It's fall, and that means everything must be pumpkin, and my next batch will be no different. I had a name for this one before I had a recipe. Here's what I'm thinking:

White Girl Wasted
A Vanilla Pumpkin Spiced Latte Stout
An homage to uggs, yoga pants, and all our favorite things about fall.

I got the base recipe from https://www.homebrewtalk.com/showthread.php?t=510792

Grains:
  • 8# Maris Otter
  • 1# De-Bittered Black
  • 12oz Flaked Oats
  • 12oz Flaked Barley
  • 8oz C-120
  • 8oz Carapils

(I may bump up the grains a little to make this more boozy...have to put the "Wasted" in "White Girl Wasted", after all. Haven't decided yet though.)

Hops:
  • .75oz Brewer's Gold (60 Min)
  • .5oz Fuggle (30 min)

White Labs WLP005

Extras:
  • 1# Lactose (Boil - 10 Min)
  • 2tbs Pumpkin Pie Spice (Boil - 10 Min)
  • 2 Vanilla Beans (Secondary, probably)
  • 5oz Coffee Beans (Dry-Bean in secondary, probably)
  • Yes, there is NO PUMPKIN in this pumpkin ale. I don't feel like actual pumpkin contributes positively to beer. Fight me.

So my concerns are that one flavor will end up over-powering another. I haven't worked with pumpkin spices, vanilla beans, or coffee in beer yet, so it's a little ambitious to try all at once not knowing what to expect. While I'm sure I will need to try a few iterations to get this right, I want to make sure I'm at least on the right track here.

Sounds pretty freaking good. My only worry would be over vanilla with 2 beans. Maybe 1 one for 4 days, take a sample, and see where it is?
