I'm planning on making a wheat ale using Wyeast 1010, but my fermentation chamber is set at 54 right now, and my house can get above 75 during the day...

Which would be better? Under the low end of the temp range, or above the high end? Anyone had to do either?

I haven't used that strain yet, but Wyeast says the range is 58-74. I would think it would be more subdued at the cooler end, with more pronounced ester flavors, perhaps too much, above that. You could always ferment it outside of the chamber but attempt to cool it down some, to keep it around 70.

With the wheats I find the best thing to do is pitch low 60s and let it rise into the 70s. So I would say pitch low and leave it out at room temp. Cool it down a little bit with a wet shirt or water bath if it gets too hot.
