I hope to use some of our corn in my next brew. I have been reading up on it and plan to do a cereal mash. Here is my thought process thus far...
1. Heat up 8 quarts of water to 160, add 2lbs raw corn, picked minutes before and cut from the cob.
2. After a few minutes, take an immersion blender to it.
3. Add in 1/2lb of malted barley and let it rest for 20 minutes for gelatinization.
4. Bring to a boil and give it another 20 minutes
5. Transfer mush to the mash tun with the other grains and extra water, and proceed to mash as usual.
So my questions is basically, will this work out fine in the end? Most of the information on the web is based on cornmeal/grits. Are there any other steps to this anyone would recommend? Will the oils from the corn be a problem? Also, maybe a 90 minute mash? Advice is much appreciated.
