I brewed the saison this past weekend. I boiled and gelatinized the one pound of unmalted spelt that my recipe included and added it in with the main mash. Unfortunately I scorched the main mash a little bit while moving through some temperature rests. I have a direct fired keggle mash tun with a recric march pump. I think that the gelatinous spelt clogged the false bottom. Never had a scorching problem before. Definitely smelled some burnt smells and had a nice black ring the the bottom after I emptied the tun. But, I tasted the wort and it wasn't too bad so I'm rolling with it. Maybe it'll be a "smoked" farmhouse saison.
