Quick connects have 1/4 barbs on them whats best size tubbing

1/4" inner diameter tubing will work great, add clamps.

Are you using a pump? If not you may be ok to skip the clamps. I have a ball valve on my kettle with 1/2" barb and just push on 1/2" ID silicon tubing to drain into my carboy. Never had any issue with the hose coming off.
