I'm making a 3-way variety six-pack for my groomsmen as gifts. I've already brewed the Pale Ale (Papazian's Palace Bitter) and a Chocolate Imperial Stout (found the recipe online; recipes below). And now I'm wondering what the third beer should be. I was thinking of a red ale, but that might be too close to the PA in terms of IBU. I was thinking of a honey amber, but I already have sweetness in the stout. Not to say I won't end up with one of those two as my third, but I'm looking for suggestions. I am an extract brewer, so please suggest accordingly. Thanks!
PALACE BITTER:
4.5 lbs. English light dried malt extract
12 oz. Crystal malt
0.5 oz. English Fuggles (boiling)
0.75 oz. Kent Goldings (boiling)
0.25 oz. English Fuggles (flavor)
0.75 oz. Kent Goldings (flavor)
0.5 oz. Kent Goldings (aroma)
STROKE OF MIDNIGHT STOUT:
6.6 lbs Unhopped Dark Malt Extract
3.3 lbs Amber DME
1 lb Chocolate Malt - used 3/4 lb.
1/2 lb Black Patent Malt
1/2 lb Munich Malt
1 lb Roasted Barley
2 oz Northern Brewer (Bittering) - used Perle instead
1 oz Chinook (Bittering) - used Galena instead
1oz Cascade (Flavoring)
1oz Fuggles (Finishing)
1/2 lb Semi Sweet Baking Chocolate (start of boil)
1 tsp Irish Moss (30)
1 tsp Gypsum (30)
