when I drive up from Portland, I find it's pretty easy to get around via bus and train as long as you're staying in the city proper and have the time for mass transit. I've stayed by the airport, downtown on Robson, and out east by the Metrotown area and had no problems doing whatever I wanted in the city. for family-friendly things, check out Granville Island Market, the museums at UBC, Van Dusen botanical garden, and get awesome asian baked goods at New Town Bakery. Capilano Suspension Bridge area north of the city is a cool and free alternative to Grouse Mountain for outdoorsy fun but you'll need a car.
