Hi, I would like to make a beer blanche to have a cut markedly fruity and sweet. I would like to depart somewhat from canonical style, and make a beer whith balanced sweet and bitter, basically with sweet body and that closes with a slightly bitter aftertaste. I would use pilsner, Vienna, wheat flakes and oats, a little weizen malt.
I was thinking to use Safale S33 yeast and I’m uncertain about hops, I thought Saaz and Premiant. I would have also liked Motueka, but hard to find in Italy for a retail buyer...
How would you handle the challenge?
