12 lb Belgian Pale
1 lb Chocolate malt
0.5 lb Crystal 60L
0.5 lb Special B
0.25 lb Black malt
1 lb Lactose late addition
Mash @ 150 ˚F for 90 min, then fly sparge
1 oz Willamette 60 min
1 oz Saaz 15 min
1 oz Saaz dry hop 1 week
I'd never had or heard of a Belgian milk stout before, so I decided to make one! This is a delicious, very easy-drinking milk stout. This yeast cakes well to the bottom of the bottle, so no need to worry about it getting mixed in. It ferments cleanly without too many esters. It has a rocky tan head and creamy mouth feel. I'm definitely going to make this one again. My efficiency wasn't that great, but I was still getting used to using a 10 gallon cooler mash tun at the time. I may try using cacao nibs to get more chocolate flavor when I make this again.
