I brewed a munich pale ale, 9# of munich, 1# of carapils. I overshot the mash temp and mashed in at 159. Over an hour it never went below 155. SG of 1.055 into the fermenter.

Fresh tube of WLP001 that i pitched directly into the fermenter. It went crazy for 5 days and was still bubbling on day 8. Ambient temp for fermentation was 66-7F. Beer out of the fermenter was at 69F.

Day 12 - 1.024 SG
Day 14 - 1.024 SG.

Beer tastes good, not dry but not overly sweet, good hop balance and can definitely taste the alcohol which beersmith says is at 4.1%.

Stuck or a lot of unfermentables? I've never had a Pale Ale finish this high. Plan to bottle this and do not want bottle bombs.
