Most people leave stouts sit for a few more weeks around 3-4. I let my last stout sit for around 25 days and I was happy with that. It tasted right so I bottled it. They also usually take a bit longer to carb up once bottled.

3 weeks is typical for most beers. Stouts you can let sit for a little longer. Remember, it isn't just the time, you also want to make sure you hit your final gravity 3 days in a row before bottling.
 
You can bottle your stout early and wait for it to mature in the bottle or you can leave it longer in the fermenter and have it mature sooner without the chance that you would get over-carbonation or bottle bombs. I'd recommend the longer time in the fermenter. You can still expect it to take considerable time to mature in the bottle as stouts do.
