Storing cider before pitching the yeast

Hi,

I am new to cider making (and this forum), and I'm doing some test batches in 1 gallon jugs, using juice from a Breville juicer. I want to add Sodium metabisulfite and pectinase, and then I'm going to wait ~24 hours before piching the yeast & nutirents (Cider House Select from Brewer's Best). Can I seal up the bottle during this intiial phase, or do they need an airlock to let out sulfur dioxide? Also, is there any harm in letting this step go longer than 24 hours? Can I stick it in the fridge for a day before pitching yeast, or is that bad? Thanks in advance for any adivce!
