I'm hoping to brew an ESB this weekend, using WLP007, estimated OG 1.05. The only DME I have on hand is wheat. Can I use that to make a 1 Liter starter, or will that have nasty effects on the yeast for my ESB?

Isn't wheat DME like 60% wheat and 40% barley? I doubt it will have any effect. The proteins and stuff we think taste like wheat, is not what the yeast is interested in. Plus, a 1L starter shouldn't change the flavor profile of your 5 gal. wort either.

heh, i've done that already. I did a starter for both a Tripel and a Witbier using the wheat DME. they both worked well - although, to be honest, they're both still fermenting and I have no clue yet on the taste =)
