Starch and Brett Question

So I know I missed my mash temp in a bad way and then had a diluted mash.

I did not get great conversion...

SO:

I was thinking of experimenting and adding a yeast that would actually eat the starch and I understand Brett will do that.

SO,

Anyone know which strain of Brett would be good for salvaging my beer?

So what I did was toss in some White Labs American Farmhouse yeast that supposedly has three strains of Brett and the guy at my Homebrew store said that it was known to eat the EVERYTHING to include the inside of oak barrels....

We will see.
 
It appears Brett possesses the enzymes for amylose and amylopectin cleavage. I don't know how effective it is on especially long chains.

I have no idea how your beer will turn out. It will definitely be unique, who knows it may even be drinkable.
