Hi all,

I am about to embark on making my first soda using a keg and was just looking for some advice'

1) I'll be experimenting with different fruit juices and was wondering whether it would be a good idea to boil the juices down ?

2) I am going to be sweetening the soda with Agave nectar/syrup and was wondering whether that might have an affect on my carbonation levels?

3) What would be a good starting point for the soda syrup to water ratio?

4) Finally any general advice?

Hey,

1) Boiling down your juices will give it a cooked taste to it. Ask yourself if you want jam-like or fresh fruit flavors.

2) It should not affect your carbonation.

3) Most sodas contain between 8 to 12 grams of sugar per 100 ml of beverage.

4) I would recommend carbonating in plastic bottles (made for carbonation) first so that you can try different iterations of your recipe before you start kegging. It's just a matter of scaling up your recipe after that. Have fun with it!
