After reading many of these posts and thread, I decided to try the simple cider route.
Signature Select(Safeway brand) Apple Juice with 80% Vitamin C x 5 Gallons
1 Tablespoon each ground cinnamon and ground cloves
1 packet Nottingham yeast
Ferment 2 weeks
Bottle conditioned 2 weeks w/5 ounces priming sugar and half a packet of CBC-1 bottling yeast. Perfectly carbonated
6.3% ABV
Clean and clear, not too sweet, not too tart, right down the center.
I appreciate all the posts and guidance from the members here. Huge help. This is going to be a huge hit with the peer taste tests
