I can't dive a lot of advice from experience here (I don't often brew european style beers with North American/new world hops because often, for my palate, the two clash) but I would lean toward less resinous hops and away from something like simcoe. I think fruit-forward hops, for example a lot of Australian/New Zealand varieties, would work well.

Have you used Belle Saison before? I haven't but 1.012 seems quite high for an FG. Maybe with extract, where you can't control your fermentability, this is more likely. I would expect mid single digits at the high end using that yeast in a saison-oriented wort. If you were looking for something like 1.012 maybe switching to a non-saison Belgian yeast would be better. Hopefully someone with experience with this yeast in extract can chime in.

Continuing with that thought, and my hop preference above, I would drop the magnum and replace it with a later addition of a more flavorful hop. With a very low OG your IBUs are going to come across stronger than the calculated value would suggest.

thanks for the reply Dave. this is the recipe i ended up brewing ->
