I am looking for some advice on a peppery siason with cascade hops and wyeast Belgian siason yeast. I steep grains currently.
 
Use some wheat and pilsner. Pilsner extract if you can get it. Go with the Wyeast 3711 if you can. It ferments well and gives a nice peppery touch to it. The cascade would be out of style. But... it'd taste good so frak style. :D
 
Yeah, frak style. I made an all Amarillo Saison this summer and it was fantastic! No peppery character, but that's just not my taste. I personally feel that the American citrus hops go real well with Saisons.
