Hi everyone,

I brewed a flanders red ale (ag) and I ended up with an OG slightly higher than expected... 1.070 instead of the 1.057 I was aiming for (at 75% efficiency), yeap that's about 91% efficiency.

Should I add some water to bring it where I expected it to be? I'm afraid that the higher gravity (and expected alcohol) will inhibit some of the bugs (lactic and acetobacter). I'm not afraid for the brett.

The yeast is Wyeast Roeselare ale blend and I plan to age it for about 2 years.
