Shelf life of fresh fruit sodas

I'm making fresh fruit sodas with citric acid, malic acid, and c02. I'm trying to avoid heating the juice because it changes the flavor profile on most juices. What is the typical shelf life for a fresh strawberry basil soda for example?
 
Depends on how you're carbonating it and where it's stored.

Ambient with fresh juice I wouldn't trust it more than a few days, maybe up to a week depending on your sanitation.

In the fridge I'd give it maybe a month or two.

With fresh juice and no heating, it's really kind of a crap shoot because you're likely to have a bunch of wild yeasts and runaway spontaneous fermentation.
 
Mr food scientist. Thanks for the reply! I'll be force carbonating it at 43psi and storing in kegs at 34 degrees. What if I add liquor into the keg with fresh fruit? How would that effect the longevity of the juice?
