Being relatively new to homebrewing, I often see warnings against creating off-flavors in my beer.

A lot of new brewers are asking themselves: Is the odor / flavor in my beer "off" or is it normal for fermenting / secondary / freshly bottled beer? I never smelled anything quite as bad as I did today.

What's the absolute worst flavor or odor you've ever had in your beer?

Mine's from a yeast I tried to save for 4 months in the fridge: Rotten wet cat food smell

I cloned my worlds favorite beer. Made the mistake of making this my first batch. Didn't know about under pitching... didn't know about fermentation temperature. Needless to say I made a phenomenal smelling banana beer. Sounds good but it was so bitter you couldn't drink it.
