Threw together a quick experimental cyser today using the following:

~1 gallon apple juice
1 lb clover honey
US05 slurry from my last batch of Graf


I used 46 ppg for the apple juice and 35 ppg for the honey, so if I did it right, then it should have the following specs:
OG 1.081
FG 1.015
ABV 8.5%

This is my first attempt at a cyser, so I'm really excited to see what the honey brings to the finished product
 
So my cyser is down to 1.000 so my math was probably off a little.

The bad news is that is had a rubbery/plasticy off flavor, which I assume to be from stressed yeast. I've had it in a swamp cooler but the US-05 slurry may not have been the best idea for this. At least its only one gallon lol.
 
Both meads and ciders tend to finish low. I've never had either finish above 1.005 unless I specifically stopped fermentation, but then it's cloudy.
 
Apple juice lacks certain things yeast need and honey has allmost nothing the yeast needs ( aside from sugar). Some yeast neutriant or a few raisens in your next batch would help.
