There are a few articles to be found on the net on using salt substitute in cheese for people who need to control sodium intake. The obvious problem is that these are not pure potassium chloride, but include other things. I'd be interested in hearing about various experiments in this area by members. Both Potassium Chloride and Calcium Chloride are salty. Interestingly the problem with salt is NOT the sodium itself, but the imbalance of sodium and potassium in your body.

My lab group has done a lot of work on sodium reduction in various cheeses. I will try to remember to post some of the abstracts when I get to a computer
