safely kegging a beer that isn't quite done?

i was wondering how many points of gravity you can safely let a beer drop after putting it in a keg without worrying about it getting over pressurized. i'd really like my hefe to be on tap by monday but don't want to risk over carbonation or damaging my keg. i haven't taken a reading yet but its been fermenting since last sunday and has slowed down quite a bit.

thoughts?
 
your keg should have an overpressure valve. If not there should be a pressure relief valve where you can manually relieve the pressure.
 
A keg should be able to handle 100-135 psi. That's 6-9 volumes of CO2. If you are more than 5 points above the expected FG, plan on burping the keg.
