I have 6 gallons of fresh pressed unpasteurized cider and was thinking of using a Riesling yeast. Has anyone ever tried this?

Go for it, maybe add some white grape juice for body as well

I really like Rieslings, not as dry and more fruity...this sounds like a great idea...let us know how it turns out.
 
It is a concept that does pique my curiosity. You might do a little research into the acid profile of Riesling grapes compared to your cider.
 
Can you tell us the exact riesling yeast you are using? I want to do this as well, but I have to go online to get this yeast.
