I want to make a beer to honor an old dog I had named Possum. She was a Border Collie of Scottish ancestry. She was red(brown) and white and I would like to do a beer that is close to the same color with a Scottish element. Here is her picture with a potential label design.

When I read this Lord Byron poem I think of my old dog.

I have a 10-gallon cooler mash tun with a grain capacity of around 25 lbs. and I make 10 gallon batches in a converted keg boil kettle.
Anybody have a good recipe for me?
