I emptied three carboys, each with a different yeast cake. After racking, I funneled the contents of a one gallon "R.O." water bottle into the carboy, swirled and funneled back into the water bottle. Then I labeled and put them in the fridge.

Are they going to be useful in a week or more?
 
Yep, they should be fine for a month or more, but the longer you go the more you may want to use a starter to get them ready for the next brew. Some people have success with washed yeast up to a year later in a starter.
 
It's probably not a concern at the concentrations you're working with, but it's not recommended to rehydrate or rinse yeast with ionically-depleted water. Osmotic pressure can kill yeasties or something. Boiled, chilled tap water is preferred.
