Quicker method for making cheddared curd cheese

Just made a batch the other night using Gianaclis Caldwell's protocol. Takes about 2 hours. And the process is pretty forgiving.

Wish I knew more to better appreciate this but I don't know the first thing about making cheddared cheeses. Love them like crazy, however. Willi Lehner, about an hour from here, has a beautiful cave, and makes award-winning bandaged cheddars. My hats off to you guys!

Gianaclis is a nice lady. We exchanged some when she was writing - can't remember which book it was, d'oh! She was looking for an alpine recipe, like I make, but I let her know the truth - that there are far better makers than me to consult. Very kind, very generous discussing with me the realities of life in a small creamery (I have a pretty tough medical issue that brought me out of running many years ago...and she was pretty straight with me with that in mind).
