Brewed 8/1/14. Created my yearly pumpkin beer and opted for a saison style. Here's what I went with:

OG: 1.064
Expected FG: 1.006
color: 6.95
ABV: 7.53%
IBU: 22.6

- water treated to Hainaut region profile
- mash @ 152F - 5.2pH
31% Maris Otter
31% Belgian Pils
18% Rye Malt
15% White Wheat Malt
5% Flaked Oats
1lb of rice hulls
- added 120oz. mashed roasted pumpkin (roast till golden brown on top)

90min boil:
60m - Mt. Hood
30m - Saaz
30m - 0.25lb Corn Sugar
30m - 0.50lb 100% maple syrup
flameout - added pumpkin pie spices

- chilled and split into two batches - both received WY3711 and one batch also received some Brett B along with the 3711
 
Bottled the regular WY3711 only batch tonight. FG was 1.008. I expect this to drop out a bit more in the bottles to 1.006. Will let these condition till about Oct. and then will try a couple. The brett b batch will get bottled in Oct. and will try some samples in early/late Oct. Thinking the brett b batch will be a great thanksgiving beer.
