i want to brew a pumpkin ale for the fall and want to make it with real pumpkin. also i want it around 7%abv. what malts should i use and hops. i want something that will blow people away.
 
Look up the "punkin' ale" thread. I just brewed it Monday. I tasted a sample yesterday, and it was awesome. It should come out around 7%. Mine was off a little and should be about 6.5%, which was fine by me.
 
9 lbs Pale Ale Malt
1 lb Flaked Oats
1 lb Victory Malt
0.5 lb C60
0.25 lb C120
1 lb Brown Sugar
2 lbs Canned Pumpkin

Any normal bittering hop to 30ish IBU

Spices added at end of boil:
1 tsp ginger
0.5 tsp cinnamon
0.5 tsp nutmeg
0.25 tsp allspice
0.125 tsp cloves
1 tbsp vanilla (post fermentation)
