I've got about 2 gallons of JOA resting in my basement. Joe's Ancient Orange was the very first recipe I made. I did not like them when I bottled them and I've left them alone since. But I did open one over the weekend. Still tastes pithy to me. They are still meads, we don't do sparkles.
Could I gently put these into a gallon bottle on top of some vanilla bean and maybe let them rest there for a week or two? Would it cover some of that pithy taste and make these drinkable? Maybe blend in a little apple juice or white grape?
Or if you've adjusted any meads with this type of off taste, what did you do to them?
