As my title says I'm making a Pineapple Apfelwein hybrid, all I plan on doing is exchanging pineapple for apple juice in Edworts Apfelwein recipe. My question is...will I need to use the 2lbs of dextrose his recipe calls for or can I just use the pineapple juice with the Montrachet yeast? I'm not going for a real strong cider here just a smooth pineapple taste. I plan on back sweeting/priming with apple juice concentrate if this helps . Anyone that's tried a Pineapfelwein as it were or a Pineapple Cider with any advice would be greatly appreciated. Thanks!
