Here are my thoughts for a Simcoe Smash. I think it would turn out around a English or India Pale ale.

Recipe Type: All Grain
Yeast: Safaele S-04
Yeast Starter: Dry yeast, no starter. Rehydrate yeast and proof with 1 tablespoon sugar.
Batch Size (Gallons): 5
Original Gravity: 1.060
Final Gravity: 1.014
Boiling Time (Minutes): 90
Primary Fermentation (# of Days & Temp):14 days at 64-68F
Additional Fermentation: 30 days at 60F

Grains:
14lbs Belgian Pilsner malt

2 tablespoons Irish moss at 15 min.

Hops:
1 oz Simcoe @ 60 min
1 oz Simcoe @ 30 min
1 oz Simcoe @ 10 min

1oz Simcoe Dryhop for 7 days.

This would be a BIAB, with mash temperature at 152-154 for a thinner beer profile.

Thoughts?
 
Looks good, I would do a 20 and not a 30 addtion but thats my personal preference. But for thinner body, I would mash 149-152 range. But then again, those would be my preference. The way you have it loks good too. Won;t know until you try. :p
 
I agree with the 20 minute addition, and I'd also consider 152 to be "medium" in terms of mash temps. I'll add that 2 tablespoons is a whole lot of Irish Moss, I think most of us do one teaspoon and you're adding 6 times that. I don't think there's any benefit to using more, so you'd just be wasting it.

Otherwise it looks good to me, SMaSH recipes are a lot of fun.
