14.25 lb of Maris

0.75 lb of US Caramel 10L Malt

Yeast S-05



Intended ABV 7.3% IBU 70



Recipe below is 74 IBU



Mash at 153 for 60 minutes



13 IBU 0.25oz Warrior (60 Min)

12 IBU 0.25oz Columbus Hops (60 Min)

24 IBU 0.5 oz Pacific Gem Hops (60 Min)



7.5IBU 0.25oz Amarillo (30min)

9 IBU 0.25oz Centennial (30min)



5 IBU 0.25oz Pacific Gem (15min)

4 IBU 0.25oz Centennial (15min)



0.25oz Pacific Gem (0min)

Yes kegged about two weeks ago. Did a head to head comparison. It's different but very good. It's the right hops but likely hard to get the proportions right especially on the dry hop.
 
I like the hop combination, the amount seemed low to me having had pernicious before. You need 5 oz more imo.
 
I got information from Brewer/Owner Luke Dickinson himself a few months ago on this beer. I'd drop the crystal and use golden promise or Maris otter only for the grain bill. I'd also drop all hop additions except a bittering and whirlpool and change the hops you used a bit. The dry hop needs to be a lot more hops, this is their second most dry hopped beer. here's what he gave:


here are some helpful hints.
Keep the grain bill simple with no Crystal malts and minimum malt complexity. Shoot for about 30ibus coming from your bittering addition. Loads of hops in the Whirlpool then heavy dry hop after fermentation.

We use Citra, Mosaic, Motueka, Centennial and a couple other NZ hops, try splitting equal amounts of each for dry hop

Use Cal Ale Yeast and Mash around 150 if doing all grain

Ok thanks. I actually used 0.5oz Instead of the 0.3oz that I listed for dry hops which gave me 6 oz in the dry hop. And I did use Maris. Drop any other grain. So they are listing 70IBU for the recipe but 30 of those come at 60 min which means 40 have to come in later additions. So lower 60 min and up later additions. Ok I'll try that. And as far as the variety of dry hops those are listed on the website
 
I'm very interested in trying to do something close to Pernicious. Was glad to see the insight coming from Luke Dickinson (thanks for sharing that arnobg). On the idea of keeping the grain bill simple - he explicitly states "no crystal". What about maybe in addition to a base grain of Maris Otter, maybe adding Carapils (maybe like 3%)? Anyone else have any other suggestions as to what might be needed here. Pernicious seems to finish nice and dry - do you think that there could also be a small addition of some simple sugars?

Looking forward to hearing results from brigraves

Personally I think there is corn sugar in the grain bill as it is pretty dry. I was also wondering if it's maybe half and half of two row/maris or two row/golden promise

I'm making this in a couple weeks and will keep everybody updated on the results. I love this beer and want a reliable homebrew version available now that WW has gone to the Dark Side.

With it finishing so dry and with the very helpful email from Luke I'm going to toss in 5-8% corn sugar to get the FG down. I'd consider mashing at a lower temperature but for this first attempt, I'll stick with Luke's suggested 150*. The real problem in cloning this for me is figuring out the IBU's created by the whirlpool additions.

So, have you tweaked this recipe since last year, aside from doing .5 vs .3 dry hop?
 
Any updates? Just wondering how the recipe turned out. I like the downsizing of the grainbill.
