So this is my second time coming up with a recipe from scratch and I'm hoping for some feedback before brewing again. My last recipe (Fresh Hop Pale Ale) turned out excellent, with a lot of credit to you guys for tips/advice. For this brew I want to make a good pecan spice seasonal without going overboard. I've taken a bunch of different recipes and combined them to create what I hope will be an excellent fall brew. Please let me know what you think/tips/advice for changes. Thanks!

Pecan Spice Ale
-------------------------------------------------------

36-48 hours pre-brew start my yeast and roast pecans.
Sterilize growler, boil 2c water and 0.5c light DME for 10 min.
Cool to 70*F and add yeast (Wyeast NW Ale 1332).
Put in plug w/air-lock, let sit at room temp (65-70).

Roast pecans; 1# pecans, bake at 290*F, rotating every 5-7 min until toasted well. Let sit in brown paper bag (to absorb oils) for 24h. Place pecans into food processor to grind to powder/meal.

Brew day
Heat 3 gallons water to 155*F
Add Grains; 0.5# honey malt, 0.5# flaked oats
Steep for 30min

Bring to boil. Add fermentables.
3.3# Amber LME
3.3# Dark LME
1.0# Light DME
0.5# Brown Sugar
2 oz Molasses

Hop Schedule
2 oz Saaz (pellets) 60min
1 oz Hallertau (pellets) 10 min

At flameout, add extras
1# pecan meal
1 tsp pumpkin-pie spice blend
Spice= 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, 1/8 tsp cloves
1 tsp vanilla.

Cool to 75*F, Add water to fill to 5 gallons, Pitch started yeast.

Primary for 7-10 days.
Rack to secondary.
Leave in secondary 14 days.

Carbonate with 3/4c corn sugar at bottling.

Here are my specific questions
1. Should I add the pecans/spices at a different time for optimal flavor?
2. I know the hops are odd for this recipe, but I have those on hand and since this isn't a hoppy beer I didn't think it would change the flavor a lot versus using something like perle hops or one more commonly used in pecan/spice ales. Thoughts?
3. Too much sugar between brown sugar, molasses and corn sugar for carbing?
4. What would you call it? A brown ale? A spice amber? It's kind of not in any typical style given the predicted IBUs, ABV, etc. Here's the recipe on brewtoad, https://www.brewtoad.com/recipes/pecan-spice-ale

Thanks for all the help. Hoping to brew next week!

....well....how did it go? S/B done by now.

I'm interested as that sounded like one hell of a crazy ass schedule for an extract beer.

Cheers!
