I'm really wanting to do a Saison this summer and I just love peaches so I'm thinking this is going to be pretty good.

I'm very new to brewing so please don't hold back if something doesn't look right.

OG 1.065
FG 1.013
ABV 6.7%
IBU 24.59

Steep
I'd like to steep something here but not sure what. Suggestions?

Fermentables
3.3 lbs Pilsen LME
3.3 lbs Wheat LME
1.0 lbs Munich DME
1.0 lbs Candi Sugar (or Honey)

Hops
1.5 oz Hallertau (60 min)
1.0 oz Saaz (5 min)

Yeast
Danstar Belle Saison

Irish Mosh (15 min)

Secondary
5 lbs Peeled and chopped fresh peaches

How does this look?

Thinking about a peach beer later this summer - when the Colorado western slope peaches become available. How is this one doing?

The problem is the raw fruit. I would look into a purée or an extract flavoring. What your looking for is just a hint of peach flavor on the back end. You can always try it to learn.

Bring the fruit to 160°f with a bit of sugar and pectic enzyme to pasturiz. The pectic enzyme is for clarity.
I would up the peaches to two pounds per gallon. It is hard to extract peach flavor. Mosher in radical brewing mentions apricots are good for peach flavor.
