This is one beer that I've had my sights set when I first began homebrewing. I love Duvel, but I didn't like that I really had to pace myself when drinking them. At 8.5% ABV, two or three of those can hit hard. So I set out to make a session version of one of my favorite beers
This is a light beer that's approachable by most (co-brewers mom only drinks crappy light beer but she found herself enjoying a couple of these), but substantial enough to keep craft beer lovers interested.
It tastes like Duvel. Pilsner malt along with a hint of Saaz hops, and a pleasant fruity yeast character to fill out the rest

Preboil Volume: about 6.80 gallons
Style: Belgian Specialty Ale
9 lbs Belgian Pilsner Malt
8.0 oz Cara-Pils/Dextrine
0.75 oz Saaz (3.5%) - 60 min (whatever it takes to hit 19 IBUs)
0.50 oz Saaz (3.5%) - 30 min
0.50 oz Saaz (3.5%) - 15 min
Wyeast Belgian Strong Ale (used http://yeastcalc.com to make an appropriate starter)
start fermenting at 65F then let rise to 72F over the next couple of days
Protein Rest - 9 quarts - 122F for 30 minutes
Saccharification Rest - 8 quarts infusion - 150F for 30 minutes
For those who build their water (light beers don't seem to work well with my tap water, so I build from distilled):
59 Cal 7 Mag 10 Sod 73 Chl 72 Sul 22 Alk
