In order to brew up 5 gallon batches, what size cooler and kettle would I need to have?

It depends how big you want the partial mash portion to be. If you're also doing partial boil you could BIAB up to about 6-7 lbs of grain in a 5 gallon pot with no need for a cooler, then add extract and the top up water at the end. If you want to go the cooler route there are calculators like this can I mash it.
