I am going to attempt my first brew. Going to try the mr beer refill to start my journey. All I have are 5 gallon and one gallon carboys which should I use. I was thimkimg of doimg the two one gallon and doing one airlocked and one just covered with cloth. What do yall think.

You can ferment two gallons in a 5g carboy. Just don't secondary in it, and don't open it up a lot. You want to keep the CO2 layer intact.

Using sanitized foil instead of an airlock is fine. I don't know about cloth though.
