I just bought a stir plate and will be making starters from now on. I found a "brick" of old DME that is around a year old and a cup in size that can be used in a starter. I also have a fresh lb. of light DME. Since it's only $4.50 worth of investment I'm going to throw the brick out and go with the fresh DME for my starter.

My question is, should it matter in a starter?

I've used pretty old DME that had been sitting in an open bag for a couple months once, didn't make a difference. As long as you decant off the starter wort before pitching the yeast, I can't see it making a difference.

Thanks BarleyWater. That's what I thought. I was thinking that I would decant off as much as possible too.
